We are featuring some favorite recipes from members of our Board of Directors and Associate Board! Today we are sharing Chicken ala King from our Associate Board President Michelle Schoch!

Serves 6

Ingredients

  • 1 small onion, chopped
  • ½ cup butter
  • ½ cup flour
  • 1 tsp salt
  • ¼ tsp pepper
  • 1 ½ milk
  • 1 ¼ cups chicken broth
  • 2 cups shredded chicken
  • 1 bag frozen mixed vegies
  • 1 can biscuits 

Directions

  • Cook chopped onion and butter in 3 qt. saucepan over medium heat for 5 min. 
  • Stir in flour, salt & pepper, milk and chicken broth. 
  • Heat to boiling, stirring constantly. 
  • Reduce heat, add in cooked shredded chicken and frozen veggies. 
  • Blend butter, 2 c. flour, ½ c. sugar. Press into ungreased 9×13 pan
  • Simmer for 10 minutes. 
  • Serve over biscuits.
